This Chicken Pesto Pasta Salad is an old time favourite, it has simple ingredients that marry together beautifully – pesto is so nice in a pasta salad! Pasta salads are actually one of my favourite lunch options, they are filling and more importantly perfect for meal prep! Finnish Christmas casseroles vol.2: Swede Casserole. Swede Casserole (Lanttulaatikko) is one of the oldest and most beloved Finnish Christmas dishes. Swede Casserole has a very distinct flavour, it’s slightly sweet with a hint of spices, usually from ginger and nutmeg. Just like its cousin Carrot Casserole, Swede Casserole is traditionally served as a side dish to baked ham and/or fish. Heads-up though, boiling and cooking swedes may not be the most pleasant of smells, but please don’t judge this humble dish based on the whiff — let the flavour do the talking!

These oven-baked Parsnip Fries are irresistible – if you’ve never tried parsnip fries before, it’s about time! Parsnip is often considered to be a somewhat boring root vegetable (I admit, guilty as charged), but these parsnip fries are far from boring. In fact, be warned they are unlikely to make it on the plate as you want to gobble them straight from the oven tray! There’s something highly addictive about them, they have this unique earthy flavour that’s at the same time sweet and slightly nutty. Nutritionwise, they are packed with vitamins and minerals so they make a healthier alternative to potatoes!

Freshly baked bread, how good is that!? I know bread making is notoriously difficult, but I don’t quite understand why. Making sourdough is a different story, but bread rolls in particular are rather easy to make, I promise! And you don’t need any fancy equipment for this recipe, just a little bit of kneading with your hands to bring the dough together. So without further ado, let me introduce you to one of my favourite types of bread: Carrot Bread Rolls (Porkkanasämpylät in Finnish). Carrot works so nicely in a bread, the flavour it adds is very subtle but it gives the bread a bit of sweetness – and of course some vitamins, which is a bonus! Also, these bread rolls freeze extremely well 🙂
