Finnish Pea Soup

This Pea Soup (Hernekeitto) is a traditional Finnish dish that’s particularly delightful on those cold winter days! It’s filling and nutritious, and suitable for most diets as it’s gluten and dairy-free. Furthermore, it can easily be turned into a vegan dish by simply leaving the pork out. If you are a fan of mushy peas you are going to love it, but if mushy peas are not your cup of pea (sorry I couldn’t resist!), it’s best to leave it for others because as the name implies, peas really are the hero of this dish!

Jerusalem Artichokes are a beautiful seasonal root vegetable that have this earthy, sweet and nutty flavour – if you haven’t come across them before, you are missing out! My favourite method of using them is in a soup, I find Jerusalem Artichoke Soup absolutely divine: it’s creamy and comforting, yet not heavy. It tastes like something you’d get served in a fancy restaurant, there’s something “gourmet” about it. However do not worry, it’s actually very easy to make at home and you only need a handful of ingredients to prepare this bowlful of goodness!

Cabbage Casserole (Kaalilaatikko) is another Finnish classic I want to introduce you to! It’s up there with my favourite Finnish foods, it’s such a hearty dish that highlights simple and cheap ingredients. This recipe is perfect for bigger families, but my two-person household has no trouble finishing it as it’s ever so delicious and you won’t get tired of eating it! Make sure to serve the cabbage casserole with lingonberry jam though, the flavour combination is a killer!

Exotic Chicken Soup

Chicken soup is one of those heartwarming dishes that always hits the spot! You just cannot go wrong with good old chicken soup, the ultimate cold remedy (or so they say). I love experimenting with chicken soup as it’s such a versatile dish, but this “Exotic” Chicken Soup is the one I always come back to. It’s super quick and easy to make, but absolutely delicious! I call it exotic because of the bananas… yes, bananas! Don’t judge until you’ve tried it, banana really works with the other flavours!

Avocado Pasta

Can you think of a better quick meal than a bowl of pasta? Me neither. In this 15-minute pasta the creamy avocado is paired with tangy lime, garlic, chilli, fresh herbs & nutty cheese and boy, it’s tasty! Funny story, this pasta became a huge hit in Finland back in 2012, so big that some stores even ran out of avocados and pecorino cheese as everyone wanted to know what the fuss was about… Well, it definitely wasn’t fuss over nothing as this Avocado Pasta is truly delicious! Honestly, you gotta try it!
