It’s one of my favourite desserts and I’m super excited to be sharing this recipe with you as it’s my very own creation 🙂 It does take a while to make as it has several elements, but I promise it’s worth the effort!

Carrot Bread Rolls

Freshly baked bread, how good is that!? I know bread making is notoriously difficult, but I don’t quite understand why. Making sourdough is a different story, but bread rolls in particular are rather easy to make, I promise! And you don’t need any fancy equipment for this recipe, just a little bit of kneading with your hands to bring the dough together. So without further ado, let me introduce you to one of my favourite types of bread: Carrot Bread Rolls (Porkkanasämpylät in Finnish). Carrot works so nicely in a bread, the flavour it adds is very subtle but it gives the bread a bit of sweetness – and of course some vitamins, which is a bonus! Also, these bread rolls freeze extremely well 🙂

Mince & Rice Pie

Mince & Rice Pie (Lihapiirakka) is a true Finnish classic, a very retro dish that’s guaranteed to satisfy your savoury cravings. There are different types of traditional ‘meat pies’ in Finland, this recipe comes in a shape of a traybake with this super tasty homemade pastry. However, for a quick version you can use shop-bough pastry too. Mince & rice pie makes a lovely weekend treat for the whole family, but it’s also great party food as you can slice it into any size bites! And no, in case you are wondering it has absolutely nothing to with English mince pie!

Spinach Oven Pancake

This Finnish style king-size Spinach Pancake is cooked in the oven! Overall it takes a bit longer to make than regular pancakes, but the hands-on time is minimal: you simply mix the batter, let it rest for a bit whilst you defrost the spinach, and pop in the oven for half an hour… voilà! The Spinach Oven Pancake makes a perfect snack, and it can be eaten both hot or cold. And thanks to spinach, it has loads of nutrients too – in fact, it’s pretty healthy!
