Runeberg Tortes (Runebergin tortut) are lush little cakes that celebrate Finland’s national poet Johan Ludvig Runeberg’s (1804-1877) birthday on 5th February. The story has it that Runeberg’s wife Fredrika invented the recipe using the ingredients she had left in the pantry to satisfy her husband’s sweet cravings. Also according to the legend, Runeberg loved eating them for breakfast… I don’t know about the breakfast part, but they are damn delicious and instead of eating them only around his birthday, they should be baked all year round!

Freshly baked bread, how good is that!? I know bread making is notoriously difficult, but I don’t quite understand why. Making sourdough is a different story, but bread rolls in particular are rather easy to make, I promise! Carrot works so nicely in a bread, the flavour it adds is very subtle but it gives the bread a bit of sweetness – and of course some vitamins, which is a bonus! Also, these bread rolls freeze extremely well 🙂

However, for a quick version you can use shop-bough pastry too. Mince & rice pie makes a lovely weekend treat for the whole family, but it’s also great party food as you can slice it into any size bites! This Finnish style king-size Spinach Pancake is cooked in the oven! Overall it takes a bit longer to make than regular pancakes, but the hands-on time is minimal: you simply mix the batter, let it rest for a bit whilst you defrost the spinach, and pop in the oven for half an hour… voilà! The Spinach Oven Pancake makes a perfect snack, and it can be eaten both hot or cold. And thanks to spinach, it has loads of nutrients too – in fact, it’s pretty healthy!
